Smoothies Yoga Retreats Malaga Style.
Some of our participants ask about the smoothie recipes, and we always say Smoothies are your opportunity to be creative! and to blend all the vegetables , fruit , super foods, that you can imagine!
However here we present one of the favorites from Yoga Retreats Malaga

One of the favorites dishes at our Retreats in Malaga!
SWEET POTATO SALAD
• 4 medium sweet potatoes, peeled and cut into 3/4 inch slices
• 1 tablespoon olive oil
• 1 can corn, rinsed and drained
• 1 can red beans, rinsed and drained
• 1 red pepper, diced
• 1 green or onion, chopped
• 1/2 cup chopped cilantro
• optional: 2 avocados, pit and skin removed, chopped (I did not use )
• Juice of 1 lime
• Salt and pepper, to taste
1). Cook the cut sweet potatoes with water in a normal pan, until they can be easily be pierced with a fork, and not let them become to soft! Take out the water and let them cool down, I even put them sometimes in the frize for 10 minutes then take a saucepan put some oil and put the potatoes in and sprinkle them with salt, pepper, oregano and cumin ( a lot of oregano and cumin,do not be shy), potatoes about 4 minutes each side.
2). In a large bowl, combine the corn, red beans, red pepper, green onions, cilantro, and avocados. Once the sweet potatoes are ready add them to the bowl. Add the lime juice, salt, and pepper. Toss to combine. Taste and re-season, if necessary.
3) The dish above is really good in combination with humus.

Crushed cashew nuts
Steam or cook the broccoli and cut it in small parts, when steaming keep the broccoli a little bit hard at the end. Cut garlic and take a little bit olive oil and some apple vinegar.
Bake the garlic a little and mix it with the broccoli, I love this recipe with a lot of garlic, on days you do not have to go out later… bake some crushed cashew nuts and spread them on top of the broccoli.
Put a little bit salt and you are ready, if you like you can at a small onion.
